Yield:  1 large loaf or 4 small loafs, or 12 muffins.

Ingredients:

  • 1/2 Cup Shortening
  • 2 Eggs
  • 1 Cup Sugar
  • 4 Ripe Bananas (the riper the better)
    • 3 of they are large bananas
  • 2 Cups Flour
  • 1 tsp Baking Soda
  • Optional – 1 cup nuts (Lorell never adds nuts as she is nutty enough)
  • Optional  – 1 cup chocolate chips

Mix all together.  Place in well greased pan.  Well greased means more than you think you need.

Bake at 350° F for

  • Large Loaf – 1 hour
  • 4 small loafs – 45 minutes
  • 12 Muffins – 30 – 40 minutes
