Yield: 1 large loaf or 4 small loafs, or 12 muffins.
Ingredients:
- 1/2 Cup Shortening
- 2 Eggs
- 1 Cup Sugar
- 4 Ripe Bananas (the riper the better)
- 3 of they are large bananas
- 2 Cups Flour
- 1 tsp Baking Soda
- Optional – 1 cup nuts (Lorell never adds nuts as she is nutty enough)
- Optional – 1 cup chocolate chips
Mix all together. Place in well greased pan. Well greased means more than you think you need.
Bake at 350° F for
- Large Loaf – 1 hour
- 4 small loafs – 45 minutes
- 12 Muffins – 30 – 40 minutes
