Pork and Chicken Adobo

1CupVinegar
1HeadGarlic
1/2tspBlack Pepper
1LeafBay Leaf
2tbspRock Salt
1 to 4TbspSoy Sauce
500gramsChicken - cut into cubes
1/2KgPork, cut into cubes
1wholePork Liver - cut into cubes
1 1/2 to 2cupsWater
Cooking Oil for Frying

 

Directions:

  • In a saucepan, combine vinegar, garlic, pepper, bay leaf, rock salt, & soy sauce
  • Put in chicken, pork, & liver
  • Let soak for 20 – 30 minutes
  • Add water & simmer uncovered until tender
  • Strain sauce, set aside
  • Chop liver finely.  Combine with sauce.  Set aside
  • Brown garlic, chicken & pork in cooking oil
  • Return everything to saucepan, cover & simmer until sauce thinkens.
